These air fryer breakfast burritos are high in protein, easy to make, and perfect for meal prep with eggs, turkey sausage, cheese, and potatoes in a crispy tortilla.

Ingredients
  

  • 6 large eggs
  • ½ pound turkey sausage
  • 1 cup cooked breakfast potatoes
  • ½ cup shredded cheddar cheese
  • ¼ cup diced red bell pepper
  • 2 tablespoons diced onion
  • 1 tablespoon milk
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 4 large flour tortillas
  • nonstick spray or a light brush of oil
  • salsa optional for serving

Instructions
 

  • In a skillet over medium heat, cook the turkey sausage until browned and cooked through. Set aside.
  • In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.
  • Scramble the eggs in a lightly greased skillet until just set.
  • Warm the tortillas slightly so they are easier to roll.
  • Divide the scrambled eggs between the tortillas.
  • Top each tortilla with turkey sausage, cooked breakfast potatoes, shredded cheddar, diced red bell pepper, and diced onion.
  • Fold in the sides and roll each tortilla into a burrito.
  • Lightly spray the burritos with nonstick spray or brush very lightly with oil.
  • Preheat the air fryer to 375°F.
  • Place the burritos seam-side down in the air fryer basket.
  • Air fry at 375°F for 6 to 8 minutes, flipping halfway through, until the tortillas are golden and crisp.
  • Serve warm with salsa if desired.

Notes

  • Do not overfill the burritos or they will be harder to roll and may open while cooking.
  • Warming the tortillas first helps prevent cracking.
  • If your air fryer is small, cook the burritos in batches.
  • These work well for freezer meal prep.
