Instructions
In a mixing bowl, combine the rolled oats, milk, Greek yogurt, chia seeds, protein powder, maple syrup, and vanilla extract.
Stir very well until everything is evenly mixed and the protein powder is fully combined.
Divide the mixture between 2 jars or airtight containers.
Cover and refrigerate for at least
4 hours
, or overnight, until the oats are soft and thick.
Stir before serving, then top with berries and peanut butter if using.
Notes
Rolled oats work best for overnight oats because they soften well without becoming too mushy.
Stir the mixture really well so the protein powder blends in smoothly.
If the oats feel too thick in the morning, stir in a small splash of milk.
Add fresh toppings right before serving for the best texture.
