Place the turkey meatballs in the air fryer basket in a single layer. Air fry for 10 to 12 minutes, flipping or shaking halfway, until cooked through and the centers reach 165°F.
Remove the meatballs and set aside.
Add the broccoli and bell pepper to the air fryer basket. Air fry at 375°F for 8 to 10 minutes, shaking halfway, until tender and lightly crisp.
Divide the rice, vegetables, and turkey meatballs evenly into meal prep containers.
Let cool slightly, then cover and store in the refrigerator.
