Ingredients
  

For the turkey meatballs:

  • 1 pound lean ground turkey
  • ¼ cup breadcrumbs
  • 1 breadcrumbs
  • 1 tablespoon milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

For the bowls:

  • 3 cups cooked rice
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional for serving:

  • lemon wedges
  • lemon wedges
  • plain Greek yogurt or simple sauce

Instructions
 

  • Preheat the air fryer to 380°F.
  • In a large bowl, mix the ground turkey, breadcrumbs, egg, milk, garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper until just combined.
  • Form the mixture into 16 small meatballs.
  • In a separate bowl, toss the broccoli and sliced bell pepper with olive oil, salt, and black pepper.
  • Place the turkey meatballs in the air fryer basket in a single layer. Air fry for 10 to 12 minutes, flipping or shaking halfway, until cooked through and the centers reach 165°F.
  • Remove the meatballs and set aside.
  • Add the broccoli and bell pepper to the air fryer basket. Air fry at 375°F for 8 to 10 minutes, shaking halfway, until tender and lightly crisp.
  • Divide the rice, vegetables, and turkey meatballs evenly into meal prep containers.
  • Let cool slightly, then cover and store in the refrigerator.

Notes

  • Do not overmix the turkey mixture or the meatballs can turn dense.
  • Wet your hands lightly before rolling the meatballs if the mixture feels sticky.
  • Check that the meatballs reach 165°F internally.
  • Add sauce after reheating for the best texture.
