Ingredients
  

  • 1 ½ pounds salmon fillets, skin removed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups cooked rice
  • 1 cup cucumber, chopped
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the air fryer
    Preheat your air fryer to 400°F (200°C) for 3 minutes.
  • Prep the salmon
    Pat the salmon dry and cut into 4 portions or bite-sized pieces if you prefer.
  • Season the salmon
    Toss or brush the salmon with olive oil, garlic powder, paprika, onion powder, salt, black pepper, and lemon juice.
  • Air fry the salmon
    Place the salmon in a single layer in the basket. Cook for 8 to 10 minutes, depending on thickness, until the salmon is cooked through and flakes easily.
  • Build the bowls
    Divide the cooked rice between 4 meal prep containers. Add cucumber, carrots, avocado, and cooked salmon.
  • Store or serve
    Serve right away, or let cool slightly before covering and storing for meal prep.

  • Let the salmon cool slightly before sealing meal prep containers.
  • Add avocado fresh if you want the best texture.
  • You can swap rice for quinoa or cauliflower rice.
  • A light sauce can be added just before serving.
