Ingredients
  

  • 1 ¼ pounds boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups cooked rice
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 cup cucumber, chopped
  • 1 teaspoon sesame seeds, optional
  • 1 tablespoon chopped green onion optional

Honey Garlic Sauce

  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions
 

  • Preheat your air fryer to 380°F.
  • In a large bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, salt, and black pepper.
  • Place the chicken in the air fryer basket in a single layer. Cook at 380°F for 10 to 12 minutes, shaking halfway through, until the chicken is cooked through and reaches 165°F internally.
  • While the chicken cooks, make the sauce. In a small saucepan or microwave-safe bowl, combine the honey, soy sauce, minced garlic, ketchup, and rice vinegar.
  • Stir the cornstarch and water together in a small cup, then mix it into the sauce.
  • Heat the sauce until slightly thickened, about 1 to 2 minutes, stirring often.
  • Add the cooked chicken to a bowl and toss it with the honey garlic sauce until evenly coated.
  • Divide the cooked rice between 4 meal prep containers.
  • Add the broccoli, shredded carrots, and cucumber to each container.
  • Top each bowl with the honey garlic chicken.
  • Sprinkle with sesame seeds and green onion if using.
  • Let the bowls cool slightly before sealing and storing.

Notes

  • Cut the chicken into even pieces so it cooks evenly.
  • Do not overcrowd the air fryer basket or the chicken may steam instead of brown.
  • You can keep the cucumber separate if you want the freshest texture after reheating.
  • For a little extra flavor, add a squeeze of lime or a drizzle of extra sauce before serving.
