Preheat your air fryer to 380°F.
In a large bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, salt, and black pepper.
Place the chicken in the air fryer basket in a single layer. Cook at 380°F for 10 to 12 minutes, shaking halfway through, until the chicken is cooked through and reaches 165°F internally.
While the chicken cooks, make the sauce. In a small saucepan or microwave-safe bowl, combine the honey, soy sauce, minced garlic, ketchup, and rice vinegar.
Stir the cornstarch and water together in a small cup, then mix it into the sauce.
Heat the sauce until slightly thickened, about 1 to 2 minutes, stirring often.
Add the cooked chicken to a bowl and toss it with the honey garlic sauce until evenly coated.
Divide the cooked rice between 4 meal prep containers.
Add the broccoli, shredded carrots, and cucumber to each container.
Top each bowl with the honey garlic chicken.
Sprinkle with sesame seeds and green onion if using.
Let the bowls cool slightly before sealing and storing.
