Ingredients
  

  • 1 pound lean ground beef
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups rice
  • 2 cups florets
  • 1 large red bell pepper, chopped
  • 1 cup cucumber, chopped
  • 1 tablespoon soy sauce or coconut aminos
  • 1 tablespoon lime juice

Instructions
 

  • Preheat your air fryer to 380°F.
  • In a mixing bowl, combine the ground beef with the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, soy sauce, and lime juice. Mix until the seasonings are evenly distributed.
  • Place the seasoned ground beef in the air fryer basket. Break it up slightly so it cooks more evenly.
  • Air fry at 380°F for 10 to 12 minutes, stopping halfway through to stir and break up the meat into crumbles. Cook until the beef is fully browned and cooked through.
  • While the beef cooks, prepare the bowls by dividing the cooked rice between 4 meal prep containers.
  • Steam or microwave the broccoli until just tender, then divide it between the containers.
  • Add the chopped bell pepper and cucumber to each bowl.
  • Top each bowl with the cooked ground beef.
  • Let everything cool slightly before sealing the containers and storing.

Notes

  • Lean ground beef works best for meal prep because the bowls stay less greasy.
  • You can swap white rice for brown rice, quinoa, or cauliflower rice depending on your preference.
  • For extra flavor, add a simple sauce right before serving instead of storing it in the bowls.
  • Chop the vegetables into bite-sized pieces so the bowls are easier to eat and reheat.
