Ingredients
  

  • 6 large eggs
  • ½ cup cottage cheese
  • ¼ cup shredded cheddar cheese
  • ¼ cup finely chopped spinach
  • 2 tablespoons finely chopped red bell pepper
  • 2 tablespoons cooked turkey bacon, chopped
  • ¼ teaspoon salt
  • teaspoon black pepper
  • nonstick spray

Instructions
 

  • Preheat your air fryer to 300°F.
  • In a blender or mixing bowl, combine the eggs, cottage cheese, salt, and black pepper. Blend or whisk until smooth.
  • Stir in the shredded cheddar, chopped spinach, red bell pepper, and chopped turkey bacon.
  • Lightly spray the silicone muffin cups or egg bite mold with nonstick spray.
  • Pour the egg mixture evenly into 6 cups, filling each one about three-quarters full.
  • Carefully place the cups or mold into the air fryer basket.
  • Air fry at 300°F for 8 to 10 minutes, or until the egg bites are set in the center.
  • Let them cool for a few minutes before removing from the mold.
  • Serve right away or let them cool fully before storing for meal prep.

Notes

  • Blending the eggs and cottage cheese helps make the egg bites smoother.
  • Do not overfill the cups because the eggs will puff slightly as they cook.
  • Cooking time can vary a little depending on your air fryer and the size of your mold.
  • Let the egg bites cool slightly before removing them so they hold their shape better.
