Preheat your air fryer to 380°F.
In a large bowl, toss the chicken with olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, black pepper, and lime juice.
Add the sliced peppers and onion to the bowl and toss lightly with any remaining seasoning.
Place the chicken in the air fryer basket in a single layer. Add the peppers and onion around it if there is enough room, or cook the vegetables in a second batch if needed.
Air fry at 380°F for 12 to 14 minutes, shaking or stirring halfway through, until the chicken is cooked through and reaches 165°F internally.
While the chicken cooks, divide the cooked rice evenly between 4 meal prep containers.
Add the corn to each container.
Divide the cooked peppers and onions between the containers.
Add the cooked chicken on top.
Add salsa, chopped cilantro, or a lime wedge when serving if you want extra flavor.
Let the bowls cool slightly before sealing and storing.
