Ingredients
  

  • 1 ¼ pounds boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lime juice
  • 3 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • ¼ cup red onion, finely chopped
  • ½ cup salsa optional
  • chopped cilantro optional
  • lime wedges optional

Instructions
 

  • Preheat your air fryer to 380°F.
  • In a large bowl, toss the chicken with olive oil, chili powder, garlic powder, onion powder, smoked paprika, cumin, salt, black pepper, and lime juice.
  • Place the chicken in the air fryer basket in a single layer.
  • Air fry at 380°F for 10 to 12 minutes, shaking halfway through, until the chicken is cooked through and reaches 165°F internally.
  • Divide the cooked rice evenly between 4 meal prep containers.
  • Add the black beans and corn to each container.
  • Divide the cherry tomatoes, romaine lettuce, and red onion between the containers.
  • Top each bowl with the cooked chicken.
  • Add salsa, chopped cilantro, or a lime wedge when serving if desired.
  • Let the bowls cool slightly before sealing and storing. If you want the lettuce extra fresh, keep it separate and add it after reheating.

Notes

  • Cut the chicken into even pieces so it cooks evenly.
  • Do not overcrowd the air fryer basket or the chicken may steam instead of getting better texture.
  • Keep salsa separate until serving if you want the bowls to hold up better in the fridge.
  • You can swap white rice for brown rice or cilantro lime rice.
