Transfer the cooked chicken to a clean bowl and toss it with the buffalo sauce until evenly coated.
Divide the cooked rice evenly between 4 meal prep containers.
Add the cooked broccoli, shredded carrots, and chopped celery to each container.
Top each bowl with the buffalo chicken.
Sprinkle with chopped green onion if using.
Add ranch or blue cheese dressing only when serving, if desired.
Let the bowls cool slightly before sealing and storing.
