- 8 small flour tortillas
- 6 large eggs
- 8 ounces turkey sausage
- 1 cup shredded cheddar cheese
- ½ cup diced bell pepper
- 2 tablespoons sliced green onion
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika

Cook the turkey sausage in a skillet over medium heat until browned and fully cooked. Set aside.
In a bowl, whisk the eggs with salt, black pepper, garlic powder, and paprika.
Scramble the eggs in a nonstick skillet until just set.
Stir in the cooked sausage, bell pepper, green onion, and shredded cheese.
Warm the tortillas briefly so they roll more easily.
Add filling to each tortilla and roll tightly.
Place the taquitos seam-side down in the air fryer basket and lightly spray with oil.
